This is what I did when I first “went raw”.  I made HUGE salads for lunch.  It’s not hard to do once you get the hang of it.

Go to the store and get a bunch of plastic reusable containers and spread them out all over your kitchen counter.  Then just plop the chopped ingredients in each one factory style and viola!

Supplies:

Tupperware bowls for salads, small containers for salad dressings, and baggies.

Optional: vegetable scrubber and salad spinner

For Salads:

2-3 small bags of organic baby carrots

1 head of green or red cabbage

1 bag of organic celery

2 bags, or 2-3 bunches of organic salad greens (e.g. Romaine, Spinach, Spring Mix, Arugula, Dandelion)

1 bag of broccoli florets or 1-2 stalks of broccoli

Either 1 bunch radishes or 1 bunch beets

Either from 3 orange bell peppers or 1-2 boxes cherry tomatoes

1 bag of avocados

½ cup each of sunflower seeds, pumpkin seeds, and/or almonds

For Salad Dressings:

Either 1 bottle (32 oz) Apple Cider Vinegar or 1 bottle of Santa Cruz organic lemon juice

Either 1 bottle of organic extra virgin olive oil (in a dark glass container) if you don’t have some at home or 1 bottle flax seed oil

Sweetener of choice: raw honey, agave nectar, organic maple syrup

Bottle of Salad Sprinkle–dried herb and spice mix that is salt free (Optional)

Braggs Liquid Aminos or Celtic Sea Salt

Handful dried organic figs and/or prunes (for dessert, of course!).  Or choose another dried fruit that you like.

Directions

Chop up cabbage into small pieces and place on the bottom of 5 containers.

Put a large handful of greens in next (different greens in different containers).

Scrub and chop up radishes or beets and throw them in next (alternating containers).

Chop up celery and sprinkle evenly into all the containers

Soak seeds the night before and put on salads either with or alternating with the avocado on salads

Sprinkle salad mix on the salads

Put 2-4 tablespoons of dressing in the dressing containers

Put a handful of carrots in each baggie

Put a handful of dried fruit in the baggies.

To make salad dressings shake or blend

½ cup Apple Cider Vinegar

1/3 cup olive oil

Some spices

Some Bragg Liquid Aminos or Celtic Sea salt

Some raw honey or maple syrup or Agave nectar

Notes:

This should definitely fill you up!

Will you keep you chewing for quite a while-calming.

Lots of fiber-watch how you handle.  Reduce amount or blend before hand if it’s too much.

Buy some flax seed crackers at your local natural grocery store or restaurant or bring some extra nuts and seeds if you’d like/need more protein/fat.
